French Restaurant "ESqUISSE" Begins Selling Bread


Ginza's French restaurant "ESqUISSE" has started selling bread from 9:30 AM to 11:00 AM. That taste, once only savored at the restaurant, can now be enjoyed daily.

Bread Crafted by Chef-Pâtissier Issei Narita, Harnessing the Characteristics of Indigenous Japanese Yeasts





The French restaurant "ESqUISSE," led by Chef-Executive Lionel Beccat, offers bread baked each morning in the restaurant's own workshop. These breads are designed to gently complement their refreshing yet aromatic cuisine.

The chef-pâtissier at ESqUISSE, Issei Narita, who crafts these breads, was recognized in 2007 with the "Best of New York" award for "Bread and Desserts" during his time at "L'Atelier de Joël Robuchon" in New York. Subsequently, from 2009, he served as Executive Pâtissier at "L'Atelier de Joël Robuchon Taipei," demonstrating his expertise both domestically and internationally.

Upon taking on the role of Chef-Pâtissier at ESqUISSE, Mr. Narita, with his extensive experience in bread-making across various countries, focused on leveraging the characteristics of indigenous Japanese yeasts. "The fundamental principle is how to translate fermentation into flavor," he explains. His creations include mini baguettes, pain de campagne, canelés, and focaccia.




With their unique umami, subtle acidity, and lingering aroma, these breads are utterly irresistible. ESqUISSE's breads, destined to grace both breakfast tables and dinner settings, are poised to become a new signature of Ginza mornings. However, please note that they are sold on a first-come, first-served basis, so be mindful of potential sell-outs.
