Aman Tokyo opened its first pastry shop in the Aman group, "La Pâtisserie by Aman Tokyo," on Friday, October 1, 2021, in the basement of OOTEMORI, the Otemachi Tower where the hotel is located.

Yoshihisa Miyakawa, Executive Pastry Chef at Aman Tokyo, has led the pastry division since the hotel's opening. He has overseen all pastries within the hotel, including afternoon tea at "The Lounge Aman," desserts at the Italian restaurant "ALVA," seasonal desserts at "The Cafe Aman," and gift items. He has also been active as a representative pastry chef for Aman, launching and guiding pastry divisions at overseas Aman properties.
Miyakawa's sweets, characterized by their chic beauty that respects the natural colors of the ingredients and their authentic, profound flavors based on traditional French confectionery, have captivated Aman's guests from Japan and abroad, gaining immense popularity.

Original chocolates, baked goods, juices, and more are sold, making it a pleasure to easily obtain Aman Tokyo's pastries and gift items for personal enjoyment or as gifts.
Additionally, to meet the breakfast and lunch needs of nearby office workers, sandwiches filled with ingredients like prosciutto and seafood marinades, along with drinks, are also available.
Freshly baked pastries include year-round classics like "Classic Chocolate," as well as seasonal items such as "Charlotte Poire" and "Mont Blanc" made with abundant seasonal fruits. There are 4 types of petit gateaux and 10 types of whole cakes. Whole cakes are perfect for celebrations like birthdays and anniversaries, or as contributions to home parties.
The bread selection includes popular breakfast items at Aman Tokyo such as croissants, pain aux raisins, and pain au chocolat, as well as a wide variety of hard breads like pain de campagne and pain de seigle.
For pain de campagne, the rare, completely pesticide-free organic wheat "Haru Kirari," produced by Orikasa Farm in Obihiro, Hokkaido, is used. Miyakawa was captivated by its rich aroma and flavor when he visited the farm.
The sandwiches, perfect for breakfast or lunch, are filled with ingredients such as prosciutto and seafood marinades, creating a simple yet satisfying flavor that highlights the bread's taste.
In addition, popular gift items like chocolates and baked goods "KOBAKO," original Aman Tokyo juices and jams from Tanai Farm in Wakayama Prefecture, and logo-emblazoned items such as tumblers and lunch bags are sold, offering a comprehensive selection as a unique pastry shop from Aman.
The interior of "La Pâtisserie by Aman Tokyo" is simple and open, yet bathed in soft light, designed to convey the concept of human connection and Aman's hospitality, aiming to be "a second home for our guests."
The stone counter at the center is made of Date Kan Stone (basalt), the same material used in the stone garden of Aman Tokyo's 33rd-floor Garden Lounge. It was selected and produced in collaboration with Izumiya Stone Shop in Kagawa Prefecture, known for its stone carving work with sculptor Isamu Noguchi, envisioned as an art piece that evokes nature.
The glass-enclosed show kitchen, with its walls, ceiling, and countertops all unified in black, creates a stage-like scene where the pastry chefs in their white uniforms appear to float. Through a window measuring X meters high and Y meters wide, guests can observe the meticulous craftsmanship and dynamic movements of the pastry chefs, creating a unique space characteristic of Aman.
"La Pâtisserie by Aman Tokyo" offers a more accessible way to enjoy Aman's luxurious gourmet offerings. This is the long-awaited opening for all Aman lovers.
