Hilton Tokyo's 1st Floor 'Marble Lounge' Transforms into the World of "Alice in Wonderland"
At Hilton Tokyo's 1st floor 'Marble Lounge,' an autumn sweets buffet titled 'Alice in the Land of Picture Books,' inspired by Lewis Carroll's "Alice in Wonderland," is currently being held. The event runs until November 16 (Thursday).

Alice, Lost in a 2D Picture Book World Through Halloween's Magic
This event is a sweets buffet that embodies the world of the picture book "Alice in Wonderland" through its desserts. Over 20 new sweets are gathered under a whimsical, monochrome, 2D-style decoration, making it feel as if you've stepped into a storybook.
The menu was created by Hilton Tokyo's Executive Pastry Chef Osamu Harita.
Each creation showcases Chef Harita's playfulness and skill, combining autumn fruits with spices and citrus. 'Autumn Queen's Arrival,' with its chestnut mousse filled with hazelnut praline cream, offers a perfect balance between the generously piped Mont Blanc cream and the rich nuts.
'Hatter's Colorful Gift,' featuring a crisp dacquoise base with pistachio and white sesame cream and citrus jam made from kumquats and various berries; 'Stylish Rabbit's Vest,' a pear and cassis compote encased in pear bavaroise; and 'Chess Game in the Land of Picture Books,' a mousse made with blond chocolate and speculoos, flavored with spicy chai cream, all playfully express the flavors of autumn. These sweets delight guests not only with their taste but also with their appearance.
In line with the 'Land of Picture Books' concept, a variety of monochrome sweets are also available. These include 'The Crown's Whereabouts: A Clear Black and White Decision,' a choux pastry filled with a blend of Tahitian and Madagascan vanilla and a hint of coffee, and 'Welcome to the Monochrome World,' a white chocolate bavaroise with a sophisticated flavor of black lemon and black tea-infused dark chocolate.
Classic sweets from Alice's story also make an appearance with new flavors. 'Drink Me,' a drinkable jelly made from Kyoho grapes and brown sugar; 'Hatter,' a dark chocolate mousse with rum-infused caramel banana; and 'The Queen of Hearts' Surprisingly Sweet Side,' featuring rose-flavored diplomat cream inspired by the Queen of Hearts, complemented by the refreshing lychee and raspberry. These sweets, where the chef's artistry shines through in every detail, deliciously recreate the narrative of Alice's adventure.
In addition to the sweets buffet, nine savory dishes prepared by the chef are available, perfect for a late lunch. Guests can enjoy 'Caesar Salad,' 'Mixed Beans and Quinoa Salad with Cold Tomato Sauce and a Hint of Tea,' a gently sweet 'Pumpkin Soup,' 'Hachis Parmentier' (minced meat topped with mashed potatoes and cheese, baked until golden), and 'Mushroom Peperoncino' between sweets.
Nineteen types of drinks, including teas from the premium German tea brand Ronnefeldt, are also offered, allowing guests to enjoy a leisurely time with their meals and sweets.

Osamu Harita
Executive Pastry Chef, Hilton Tokyo
Born in 1979. After graduating from Tokyo Confectionery School, he moved to France in 2005. He worked under MOF Chef Elie Cukasz, and from 2006, he was involved in various dessert sections at the 5-star Parisian hotel "Le Meurice" under Michelin 3-star Chef Yannick Alléno, where he was in charge of plated desserts. During the same period, he won awards in 2006 at the "Relais Desserts Charles Proust Cup," one of France's most prestigious pastry competitions, and in 2009, he was awarded in the chocolate category of the domestic preliminaries for the "Coupe du Monde de la Pâtisserie." Upon returning to Japan, he served as Chef Pâtissier at his family's pastry shop "Nut Berry Farm" in Tokushima Prefecture. In January 2017, he assumed the position of Executive Pastry Chef at Hilton Tokyo.
