Fine Sake, Fine Music, Fine Drinking Establishments: Todoroki Saketen
Todoroki Saketen is located in the southernmost part of Hakata Ward, Fukuoka City. While it is Hakata Ward, the area where our shop is situated is quite far from the typical "Hakata-esque" cityscape (like Nakasu or the Hakata Station area).

Does the finished sake have a unique character?
In addition to sake and shochu, we also specialize in wine, and we sometimes receive questions like, "Isn't it difficult to handle so many genres?"
However, we select our beverages, regardless of genre, based on the same criteria: "What is the creator trying to express?" "Is the concept clear?" "Are they involved with the raw ingredients, including environmental issues?" "Do they have the ambition to improve the quality of their sake year after year?" And, "Does the finished sake have a unique character?" That's why it's not difficult for us. The more you learn, the more you realize that delicious things often share commonalities across genres, and we are constantly impressed by the passion of creators, regardless of country or alcohol type.
Fukuoka: A Land of Sake
When people think of Hakata, the entertainment district of Nakasu often comes to mind, and being in Kyushu, there's a strong association with shochu. However, Fukuoka is traditionally a sake region. In the past, it boasted production volumes second only to Nada and Fushimi among the three major sake-producing areas. Even today, there are many breweries along the Chikugo River in the southern part of the prefecture. Furthermore, it is one of Japan's leading cultivation areas for "Yamada Nishiki," the finest sake rice. Sake brewing that utilizes local Yamada Nishiki is thriving, and the sake is characterized by its softness and rice umami.

Since we're on the topic, let us introduce a sake from Fukuoka.
Komagura
Mui-no-kome Rokujyu Tokubetsu Junmai
¥2,688 (1.8L), ¥1,365 (720ml)
Sake brewed by locals using local rice. Using organic Yamada Nishiki cultivated in the Itoshima region of Fukuoka, its theme is "harmony with food and body." It has a pleasant acidity and a solid core.
It's delicious both chilled and warm, but recently I've been enjoying this sake at room temperature ("hiya"). "Hiya" originally means room temperature (though in recent years, even sake chilled in the refrigerator is often loosely referred to as "hiya"). The gentle umami, the smooth texture that only room temperature can provide, and the pleasant acidity make it easy to keep pouring another glass. How about some Matsuura Toshio's "TOKYO MOON" as background music? (Airs every Sunday from 7:00 PM to 7:30 PM on Inter FM 76.1MHz). I'm a huge fan of Mr. Toshio Matsuura's selections... but it seems to be only receivable in the Tokyo and Yokohama areas. What a shame.

Additionally, to allow customers to enjoy sake from all over Japan and Kyushu, we opened the izakaya "Uwanosora" in 2003. This is located in Haruyoshi, right next to Nakasu, so please stop by if you're on a business trip to Hakata!
