Wajō Waraku | Episode 2: Izakaya Imadeya, a Specialist Shop Sharing Sake Culture

“Aromatic sake, soothing shochu, wine from the land of chopsticks, and vibrant fruit liqueurs” is our theme.

Imadeya, a specialty shop sharing the culture of sake.

About an hour's drive east from the city center, Imadeya is nestled in a lush, nature-rich area of Chiba City's Chuo Ward.
Many of you may know us from the surrounding golf courses. We're conveniently located just five minutes from the Omiya exit of the Chiba-Togane Road, welcoming not only local Chiba City customers but also those from neighboring areas who travel via the highway.

The president's hands-on involvement in brewing aims to share and celebrate sake culture.

Our selection includes local sake, carefully chosen shochu, and domestic fruit liqueurs. For wine, we personally visit vineyards in Japan and abroad, connect with the producers, and inspect their operations before making our selections, ensuring we only offer wines we truly believe in.

Each bottle embodies the passion, dedication, warmth, and care of its maker. While varying by type—sake, shochu, or wine—each beverage captures the natural blessings bestowed upon its ingredients during cultivation. From raw materials to the finished product, they gather the collective aspirations of many individuals.

At Imadeya, we are proud to introduce these meticulously crafted beverages. We aspire to share the culture of sake with everyone we encounter through these bottles—from the people involved in bringing the sake to our shop, to the restaurants that artfully present it, and ultimately, to you, our cherished customers who savor every drop.

Are you enjoying your chilled or warm sake?

The taste of sake changes with every occasion. Factors like how it's served, its temperature, the accompanying delicacies or dishes, and even your own condition can alter the experience. It also depends on who you're drinking with, and of course, the season plays a role.

When dining out for wine, we often consider its temperature and pairing with food. But when enjoying Japan's national beverage, sake, outside the home, how many of us consider its temperature or its harmony with our meal?

Interestingly, even 'chilled sake' served at restaurants is typically around 5°C (known as 'yuki-bie' or snow chill), and its temperature gradually rises as you enjoy it with your meal.
At around 10°C ('hana-bie' or flower chill), if you try it in a white wine glass, the way you perceive its aroma and the dishes that pair well with it begin to change. The same sake can reveal different facets depending on the serving temperature, transforming its character to complement dishes ranging from sashimi to simmered fare.

The same applies to 'warm sake.' From 'hinata-kan' (lukewarm, 30°C) to 'tobikiri-kan' (very hot, 55°C), the aroma, taste, and food pairings for the same sake change depending on its temperature.

Knowing these nuances can significantly enhance your enjoyment of a single glass of sake. When savoring a drink, wouldn't you prefer to make it as delicious as possible and create a delightful experience by pairing it with food?
