French Table Knife Brand Perceval Arrives in Japan
Perceval, the French table knife brand from the Auvergne region, beloved by accomplished chefs worldwide, has finally landed in Japan. Sales will begin in late October.

The "9.47" Table Knife Born from a Chef's Passion
Yves-Charles, owner and chef of the Michelin-starred Parisian restaurant La Maison Courtine, was searching for a table knife with exceptional sharpness. It was then that he discovered Perceval, a knife workshop founded in France's Auvergne region, a town renowned for its cutlery for 600 years. He was so impressed by the sharpness of their folding knives that he requested they produce table knives. However, his wish was not granted.
Undeterred, Charles went on to purchase the Perceval atelier itself and, together with Perceval's skilled artisans, embarked on creating the ultimate table knife.
Incorporating the input of his fellow three-star chefs and channeling all of Perceval's expertise, they spent two years completing the "9.47," the flagship model of their table knives, which boasts both superb sharpness and refined design.
The "9.47" draws inspiration from the fluid, unadorned elegance of 17th-century French knives. Its sharpness and design have garnered widespread acclaim as the ideal knife for enhancing the culinary experience. It is said to effortlessly slice through soft foods, vegetables, and even large cuts of meat without compromising their form.
In addition to the "9.47," the items being introduced to Japan include the "888" steak knife, the high-end table knife model "Le Grand" reminiscent of elegant 18th-century designs, the "Table Fork" which can be smoothly inserted into beautifully plated artistic dishes without disrupting their aesthetic, and Perceval's original folding knives.
A distinctive feature of Perceval knives is that every stage, from heat treatment and grinding to assembly and polishing, is performed by hand by skilled artisans. The handles are crafted from rare materials such as ebony, boxwood, desert ironwood, ivory, meteorite, and jade. Their exquisite finish earned them the Grand Prix in 2012 for the "Stars & Métiers" award, which recognizes the most brilliant achievements in French artisanal craftsmanship.
These are special knives that have earned the complete trust of many renowned three-star chefs in France, including those at "Astrance" and "Alain Ducasse." They are poised to bring a new dimension of culinary enjoyment to our daily lives.
