Italian Restaurant "HAJIME" Celebrates First Anniversary with Special "Nagasaki" Themed Dinner Course and Accommodation Package

Restaurant "HAJIME," located within the secluded auberge "TOTOTEI" where Nagasaki's history breathes, will celebrate its first anniversary in December 2024. To commemorate this milestone, a special anniversary dinner course, themed around "Nagasaki" and featuring carefully selected pairing wines, will be available for a limited time from Sunday, December 1, 2024, to Friday, February 28, 2025.

At "HAJIME," the chef meticulously selects local Nagasaki ingredients, maximizing their potential through traditional Italian culinary techniques to create dishes that are both simple and refined.
All dishes are served on "Hasami-yaki," a Nagasaki ceramic ware with 400 years of history, allowing guests to appreciate the beautiful harmony between the tableware and the food. The pairing wines, including selections from Japan, are chosen to perfectly complement each dish.

Restaurant "HAJIME" presents a special "Nagasaki" themed dinner course. We offer an 11-course menu crafted with gratitude by Chef Kousaka Nikiki, luxuriously utilizing carefully selected Nagasaki ingredients that deepen in flavor as the seasons progress. Please savor these creative dishes that allow you to experience the changing seasons with all five senses. For pairings, we offer "Makichore Wine," a selection of exquisite wines from various regions, and other carefully chosen Japanese wines, ensuring a delightful harmony with the cuisine.

The dishes served at Restaurant "HAJIME" are presented on "Hasami-yaki," ceramics crafted using traditional Nagasaki techniques. (Mainly from Rizaemon Kiln, Aizen Kiln, Kunzan Kiln, Saikai Toki, Kazuma Kiln)
Hasami-yaki, with over 400 years of history, is characterized by its beauty and practicality, and is cherished for its designs that fit modern lifestyles. At "HAJIME," the delicate colors and textures of Hasami-yaki enhance the visual appeal of the cuisine. These handcrafted vessels harmonize with each dish, allowing guests to experience Nagasaki's rich culture.

Restaurant "HAJIME" was reborn in a new style, succeeding the "Chuka Ryotei TOTOTEI," which has been loved by many guests. Cherishing the "hospitality that lingers in the heart," inherited from its days as a traditional restaurant, the main hall with views of the courtyard features modern furniture, creating a comfortable space where Japanese and Western elements blend. Furthermore, private rooms reminiscent of the former Chinese restaurant are also available. Here, you can enjoy seasonal course meals around a round table in a private setting.
The kitchen is equipped with Nagasaki City's only wood-fired oven, where pizzas made with the finest ingredients are baked one by one with care.
