Typically, when hotels host international chefs, it’s often limited to chefs within the same brand rotating through different locations. However, Park Hyatt Tokyo is different. They go beyond hotel boundaries, directly recruiting world-renowned, top-tier chefs from their respective cities. This is made possible by the network of Hyatt Hotels, which emphasizes its strength in "food."
The spotlight this time is on James Kent, a leading figure in New York’s food scene. After honing his skills at renowned dining establishments in the city, his first role as executive chef at
Eleven Madison Parkearned it four stars from the local publication The New York Times. It also boasted three Michelin stars and a ranking in the World's 50 Best Restaurants. Subsequently, "NoMad" (now closed), which opened under his direction, also received one Michelin star.
After going independent in 2017,
Crown Shyhe opened, which was featured in Michelin within just six months and achieved the highest score on "The Infatuation," the most popular restaurant review website in the US. Furthermore, "SAGA," which opened in 2021,
SAGAreceived two Michelin stars this autumn, and

What characterizes Chef James Kent's cuisine... Honestly, I haven't experienced his dining myself yet. However, research suggests his style is based on French techniques but unbound by them, embracing freedom. This is the essence of New York-style innovative French cuisine. Therefore, the dining experience is likely to be one that artfully weaves moments of premium delight into simplicity that highlights the ingredients.

- Toro wrapped shiso leaf, pickled shinano apple, Shiitake Mushroom XO
- Diced Tuna loin, red kiwi, Pickled Chillis, Puffed Rice
- Tuna Toast, Crispy Sourdough, Spicy Chili Crunch, Uni
- Seaweed Broth, grilled shellfish, Pickled pumpkin and daikon noodles
It seems that four dishes will be served in a sharing style just for the amuse-bouche. The tuna is certified sustainable seafood. The Shinano apples are from a tree that is 100 years old. This indicates a meticulous selection of ingredients from the very start.

King crab, Braised Mushroom, Mustard Spinach, Brown Butter Shiitake Broth
King crab has been chosen for the seafood dish. While delicious on its own, what kind of chemical reaction will occur when combined with the umami of mushrooms? This is undoubtedly the highlight of the menu.
Beef, Roasted Sweet potato, Black Garlic Butterscotch, Fuji Apple, Crispy Chestnuts
This main dish features melt-in-your-mouth, tender Akita beef, complemented by apple and chestnuts to evoke the colors of late autumn.
Satsuma and vanilla ice cream, Toasted Meringue, Honey
Sweet potato, which also appeared in the grilled dish, makes an appearance here too! This connection between ingredients seems to be a key element.
