AMAN TOKYO has begun accepting reservations for its original Christmas cakes for the festive season. Stollen will also be available from December 1st (Sunday) to 25th (Wednesday).

Crafted by AMAN TOKYO's Executive Pastry Chef, Yoshihisa Miyakawa, this Christmas cake garners popularity each year. This year, a Charlotte adorned with an abundance of vibrant berries makes its debut.

The cake, covered in redcurrants and blackberries, is inspired by the "Otemachi Forest" adjacent to AMAN TOKYO. The interior of the Charlotte features a two-layer structure: a Champagne-infused mousse and a strawberry mousse, with a compote of strawberries sautéed in balsamic vinegar sandwiched between them. It offers a pleasant tartness.

The biscuit surrounding the cake is kneaded with cocoa powder and meticulously coated in chocolate, one by one. This Charlotte, a perfect creation for adults, showcases Chef Miyakawa's artistry, allowing for a delightful marriage of flavors with every slice.

Additionally, two types of Stollen, a traditional European baked good meant to be sliced thinly and savored gradually until Christmas while giving thanks for the past year, will be available for a limited time from December 1st (Sunday) to 25th (Wednesday).

The "Stollen," baked with AMAN TOKYO's original recipe, is a moist creation featuring an almond dough enriched with nuts such as almonds, hazelnuts, and walnuts, dried fruits like oranges, figs, and prunes soaked in liqueur, and spices including ginger and cloves.

The cake, packed with an abundance of ingredients, is coated with elegantly sweet Wasabon sugar. This Stollen, generously dusted with Wasabon sugar, offers a melt-in-your-mouth texture and a gentle sweetness compared to the standard version.

Meanwhile, the "Stollen Raspberry" features a cocoa dough mixed with pistachios and freeze-dried raspberries, offering a delightful combination of subtle bitterness and tartness.
