Aman Tokyo reopened its Italian restaurant 'Arva' on the 33rd floor on Wednesday, September 2, 2020.

Chef Hiraki's Italian Cuisine, Featuring Select Ingredients Sourced from Producers Across Japan.
'Arva', which had continued to suspend operations due to the impact of the COVID-19 pandemic, has now reopened in a safe environment with enhanced hygiene measures.
Arva, Aman's Italian dining concept found worldwide, draws inspiration from Italian culinary traditions, sustainably sourcing seasonal ingredients from forests, seas, and the earth.
At Aman Tokyo's Arva, Executive Chef Masakazu Hiraki, with 17 years of experience in Italy, visits producers across Japan to source select ingredients. His simple yet profound Italian dishes, crafted with delicate sensibility, are highly acclaimed by guests both domestically and internationally.
The autumn menu, launching in the expansive 33rd-floor space with 8-meter high ceilings, features dishes made with seasonal porcini mushrooms, often called the 'king of mushrooms' and one of the largest in the world. Highlights include a simple risotto that enhances the rich flavors of both dried and fresh porcini mushrooms with just creamy cheese, and a sformato that combines the smoothness of egg and Parmesan fondue with the texture of fried porcini mushrooms, all infused with the aroma of truffle. These dishes capture the essence of autumn's arrival.
Chef Hiraki, who aims to 'actively use domestically produced ingredients, especially in times like these,' highly recommends the 'Hokkaido Shorthorn Beef Meat Sauce' this season. This signature Arva dish features a robust sauce, slowly simmered with tomatoes and aromatic vegetables, served with al dente pasta. It is made exclusively with Shorthorn beef from North Tokachi Farm in Hokkaido, raised amidst the vast natural landscapes and sea breezes.
Additionally, guests can enjoy a variety of signature dishes, including 'Agnolotti Cacio e Pepe,' a ravioli rendition of Rome's classic spaghetti with cheese and pepper, and 'Castelfranco and Apple Insalata,' a salad featuring the slightly bitter Castelfranco radicchio with apple sweetness, dressed with walnuts and Gorgonzola. These are available à la carte and as part of a course menu.
