The Ultimate "Food-Pairing Sake" from Musashi by Aman
AMAN Tokyo has launched an original Japanese sake, crafted from new rice personally cultivated and harvested by the master of the hotel's "Musashi by Aman" restaurant. It is available not only at "Musashi by Aman" but also at the AMAN TOKYO boutique on the 33rd floor.
A Dry Sake Pursuing Crispness, Never Tiresome
An original Japanese sake, described by Master Musashi as the "ultimate food-pairing sake," has been born.
Two types are available: "Musashi by Aman Extra Dry" (330ml/720ml) and "Musashi by Aman Extra Dry Sparkling" (720ml). Both can be enjoyed at "Musashi by Aman" and are also sold at the AMAN TOKYO boutique. Furthermore, the "Extra Dry" (300ml) is also offered in the AMAN TOKYO guest room minibars.
The rice used for this sake is the new "Hitomebore" crop, planted in Musashi's hometown of Yamanashi Prefecture and harvested last autumn. With a commitment to pure water, the rice was planted in Hokuto City, Takekawa, where the spring water from the Southern Alps' Kaikomagatake flows. Throughout the summer, the master personally tended to the fields, removing weeds by hand and nurturing the rice with great care.
The new rice, harvested in September last year, was brewed by Nanami Watanabe, a notable young female Toji (master brewer) at Niizawa Jozo Ten in Miyagi Prefecture. It was created using a novel technique in a moromi (fermentation mash) tank smaller than those typically used for sake brewing.
Musashi commented, "At 'Musashi by Aman,' we offer a lineup including original Junmai Daiginjo polished to 7% of its original grain, as well as Junmai Daiginjo and Junmai Ginjo. However, we didn't have a Junmai-shu, so I wanted to create a dry sake with a crisp finish that wouldn't become tiresome. I believe 'Musashi by Aman Extra Dry,' made with 'Hitomebore' rice—the same variety used for our sushi rice—is a perfect food-pairing sake that complements sushi exceptionally well, offering the true flavor of rice made only with rice and rice koji."
Furthermore, at "Musashi by Aman," where originality is pursued in everything from rice cultivation to sake brewing, the vessels for sushi, appetizers, and sake are handcrafted by Musashi himself using clay from the rice fields where the rice was grown. Musashi states, "At 'Musashi by Aman,' we believe that welcoming guests with items made by myself—the rice, the sake, and the tableware—is our philosophy."
