Introducing the "Crème Brûlée Pancake Soufflé"
Following last autumn's popular Truffle Pancakes, a new "hybrid pancake" that fuses crème brûlée and soufflé pancakes has arrived at Hotel InterContinental Tokyo Bay. It is currently being served at the hotel's New York Lounge.

Hybrid sweets, which combine the best of two types of pastries or breads, such as croissant x taiyaki or pancake x tiramisu, have been gaining attention since last year for offering an even more evolved deliciousness.
With the upcoming Japan debut of "Dominique Ansel Bakery," famous for its cronuts in New York, scheduled for this spring, the popularity of hybrid sweets is showing signs of further growth.
Amidst this trend, the "Crème Brûlée Pancake Soufflé" has been introduced at the New York Lounge as the second installment of hybrid pancakes, following the well-received truffle pancakes from last autumn.
The luxurious New York-style space, designed with the concept of "Healthy, Beauty, Fresh," pursues comfort, relaxation, and exquisite cuisine, and currently offers this dish as a year-round menu item.
Overseen by Executive Pastry Chef Masami Narigasawa, this pancake uses "Agave Syrup," an organic sweetener made from the nectar of agave, a type of cactus that grows in the vast deserts of Mexico. While retaining a chewy texture, the incorporation of tofu into the batter is a clever touch that enhances the fluffy lightness of the soufflé.
The pancake is topped with a fragrantly caramelized crème brûlée, and vibrantly adorned with "strawberries" to celebrate 2015. Alongside, a generous dollop of fresh cream with a gentle sweetness, made with Japanese sugar (Wasanbon), is artfully placed. It's a luxurious combination that allows you to savor two distinct textures, fluffy and crisp, at once.
