EAT | Food Artist Ayako Suwa Proposes New Ways to Enjoy Sake & Soda
“Sake Soda BAR” to be Held at Fukumitsuya in Midtown
“Sake Soda BAR,” where Food Creation, led by food artist Ayako Suwa, proposes new ways to enjoy “Sake Soda” from Fukumitsuya, a long-established sake brewery in Kanazawa. It will be held from 6 PM on January 16 (Friday) at Fukumitsuya within Tokyo Midtown.

Customized Menus and Gifts Featuring Suwa's Sake Soda Arrangements
Fukumitsuya was founded in Kanazawa in 1625, at the beginning of the Edo period. For centuries, its rich flavors have delighted not only the people of Kanazawa, the “culinary capital,” but also numerous sake connoisseurs. Today, in addition to Kanazawa, they have branches in Tokyo and other locations. The Tokyo Midtown branch features a shop and a standing bar. While preserving the legacy of this esteemed brewery, Fukumitsuya has aggressively forged new paths for sake, culminating in the creation of “Sake Soda,” a combination of sake and carbonation, developed over two years.
“Sake Soda,” a “Japanese sparkling” beverage with an alcohol content of 6%, lower than regular sake, is characterized by its light taste. Currently, three varieties are available: “Clear,” with its elegant aroma and smooth taste; “Old,” with a deep, mellow flavor developed through aging; and “Tonic,” a blend of pure rice sake with a crisp taste and tonic water. It can be enjoyed on its own or as a cocktail.
The “Sake Soda BAR” is being held to convey the new charms of “Sake Soda.” The collaboration partners are Food Creation, led by food artist Ayako Suwa, who has previously worked with various companies and hosted “guerrilla restaurants” in Singapore, Paris, Hong Kong, Tokyo, and elsewhere. They will propose new styles of “Sake Soda” and present a food installation.
Additionally, customized menus, featuring arrangements of Sake Soda flavors by Suwa, who has ties to Kanazawa, including her exhibition “The Taste of Curiosity: A Museum of Curiosity” at the 21st Century Museum of Contemporary Art, Kanazawa last year, will be available from January 16 (Friday) to January 25 (Sunday). A “Sake Soda Gift” selected by Suwa will also be unveiled.
“Sake Soda” can be enjoyed not only by sake lovers but also by those who are not typically fond of sake. What kind of “chemical reaction” will be born from this encounter with Ayako Suwa, a “culinary artist”? We are eager to experience its taste.
