A Manju Meaning "Unexpected Happiness"
CAFÉ KITSUNÉ, opened in 2013 by the French brand "MAISON KITSUNÉ," is a cafe. To celebrate its recent renovation, Toraya's special two types of sweets will be released on October 1st (Wednesday).
"Kitsunefuku," which signifies "unexpected happiness," is a manju inspired by the small fox figurines displayed at CAFÉ KITSUNÉ. The dough uses grated tsukune yam, giving it a moist texture. The anko filling is made with Hokkaido-grown adzuki beans. Artisans meticulously finish each one, crafting pink ears and noses, and brown eyes.
The other offering, "Tamagitsune," was created inspired by MAISON KITSUNÉ's iconic FOX HEAD motif. Fox-colored and white anko are strained into a crumble and applied around ogura anko to replicate the fox's fur. The crumble uses only rare white beans, known for their delicate flavor.
