Vacherin, a traditional French dessert, is made by piping meringue into a mold, baking it, and then topping it with whipped cream and vanilla ice cream. Jean-Paul Hévin has reinterpreted this classic with his unique chocolatier's sensibility. He has created a perfect summer ice cake, harmonizing the rich, deep flavor of chocolate with a refreshing fruit sauce.
Two flavors are available: "Vacherin Chocolat Framboise" and "Vacherin Chocolat Passion Mangue."
"Vacherin Chocolat Framboise" features a layer of bittersweet chocolate ice cream, a tart raspberry sauce, and chocolate-flavored biscuit, with the characteristic crisp meringue on top providing a textural contrast. "Vacherin Chocolat Passion Mangue" combines milk chocolate ice cream, a passion fruit and mango sauce, and chocolate-flavored biscuit, enhanced with crisp meringue. It offers a taste reminiscent of exotic tropical fruits.
Additionally, Jean-Paul Hévin's eat-in space, "Bar à Chocolat," will offer two Vacherin-inspired desserts as part of its summer-limited menu. The rich "Vacherin Glacé au Chocolat" is a rich creation that can be enjoyed with your choice of fruit sauce and whipped cream.
