In Koga City, Fukuoka Prefecture, stands Okinashuzo, a brewery with over 250 years of history. Throughout its long legacy, it has refined its craft by stripping away the superfluous. This sake is intended to grace the most important moments in life. "We want to create the ideal sake, one worthy of adding color to life's most significant scenes." This has been the long-held dream of Okinashuzo's Toji (master brewer).
Thus, Junmai Daiginjo OKINA was born.
The brewing process is meticulously managed. Rice is cultivated in-house to ensure complete control over its growth. For the water, they use "Taikosui," a spring water from Fukutsu City rich in phosphorus, which activates the koji. Furthermore, precise fermentation management and techniques that fully leverage the qualities of each ingredient are paramount.
From the brewer's constant monitoring of the sake's condition, his patience, to the "Shizuku Shibori" method of extraction using only gravity, the Toji's passion is infused into every moment. This dedication results in a limited production of only 2,000 bottles, making it a highly rare sake.
ANAIS COMPANY was responsible for the creative direction. Deeply moved by Okinashuzo's vision and dedication, they provided comprehensive support.
The packaging features abstract graphics representing rice and water, the primary ingredients of sake. The semicircular rice motif, rendered in a dot pattern, signifies the 35% polishing ratio, while the water is depicted by the Seigaiha wave pattern. The result is a product design that exudes a sophisticated elegance, possessing presence without being overly assertive.
Sake is gaining global popularity. OKINA is slated for export overseas and will soon be featured in Michelin-starred restaurants. Its future trajectory is certainly one to watch.
