The beloved "Special Grade Gateau Chocolat" from KEN'S CAFE TOKYO, cherished for many years. After further trial and error and improvements, the first new product in 15 years, the "Extra Special Grade Gateau Chocolat," has arrived. This is a limited edition of 100 pieces.

The First New Product in Our 15th Year
This year marks the 15th anniversary of KEN'S CAFE TOKYO, renowned for its "Special Grade Gateau Chocolat," hailed as the pinnacle of gateau chocolat. Chef Kenji Ujii, never content with the status quo, has created the "Extra Special Grade Gateau Chocolat" to commemorate our 15th anniversary, aiming for even greater heights.
The ingredients feature 100% "Chuao," the finest Criollo chocolate from Italy's Domori, considered a rare gem.
This chocolate is made solely from cacao beans that possess a high aroma, carefully cultivated and roasted, with only cacao mass and sugar, without any added butter beyond what is naturally present in the beans (no added oil).
The "Extra Special Grade Gateau Chocolat" uses a simple recipe, eschewing common gateau chocolat ingredients like flour and cocoa, and is made only with chocolate, butter, eggs, and sugar. This allows for the full appreciation of the powerful, rich aroma of this exquisite cacao, and its perfect balance of bitterness, sweetness, and acidity.
Its appeal also lies in the varied textures it offers depending on the temperature. At room temperature, it's moist and rich; when chilled, it has the texture of nama chocolate; and when lightly warmed in the microwave, it transforms into a juicy, melting experience akin to a fondant chocolat. This is a truly unique dessert, baked entirely by hand by Chef Kenji Ujii.
Criollo beans, said to account for only 0.001% of global cacao production, are extremely rare. Consequently, the number that can be produced is very limited, with only 100 available for sale.
