Hokkaido's renowned "Sushi Miyakawa," a recipient of three stars in the "Michelin Guide Hokkaido 2017 Special Edition," has opened its first Tokyo establishment, "Sushi Shin by Miyakawa," on the 38th floor of the Mandarin Oriental, Tokyo. Savor Sushi While Enjoying Conversation with the Chef, with Tokyo's Spectacular Views



"Sushi Shin by Miyakawa," the first Tokyo outpost of Hokkaido's acclaimed "Sushi Miyakawa," has opened on the 38th floor of the Mandarin Oriental, Tokyo. As of 2019, "Sushi Miyakawa" is one of only five restaurants in Japan to hold three Michelin stars. The passion for sushi held by its head chef, Masaaki Miyakawa, fueled the motivation for this Tokyo expansion, leading to its opening at the Mandarin Oriental, Tokyo.

Chef Miyakawa guides the chefs at "Sushi Shin by Miyakawa" using his unique methods that incorporate local Hokkaido ingredients. Utilizing the finest seafood sourced daily from Hokkaido and Toyosu Market, he offers Edomae-style sushi akin to that served at "Sushi Miyakawa." Examples include sea bream tataki served with wasabi and salt, and seasonal sushi featuring fragrant, sweet sea urchin and nori atop rice. Each dish is crafted to maximize the exquisite flavors and umami of its ingredients, achieving a perfect balance.

The interior of "Sushi Shin by Miyakawa" features design elements that showcase Japanese craftsmanship, carefully selected by Chef Miyakawa. The space includes lattice work by Nobuo Yabata, a master of Kumiko, a traditional woodworking technique with a 1300-year history, and earthen walls created by Shuhei Hasado, renowned as a soil wall designer, using cypress wood over 350 years old for the counter. From this vantage point, overlooking the stunning Tokyo skyline with landmarks like the Tokyo Skytree, guests can savor Edomae sushi while engaging in conversation with the chef.
