Acclaimed as the "King of Casual Dining" with a devoted following in Japan, Australia's own "bills" is set to open a new restaurant on Waikiki Beach in Hawaii next spring. Featuring a menu that incorporates local ingredients, this new iteration of casual dining promises to be the culmination of bills' 20-year journey.

Merging Beach Culture with Hawaiian Surf Culture
The first "bills" opened in 1993 in a Sydney suburb by Bill Granger. Its simple yet creative dishes, highlighting fresh ingredients, quickly gained fame. The "organic scrambled eggs" were even lauded by an international newspaper as "the world's best egg dish." Alongside other signature items like the famed "ricotta hotcakes," the menu offers dishes you'll want to eat every day.
In Japan, the first store opened in Shichirigahama in March 2008, followed by the second store in Yokohama Red Brick Warehouse in March 2010, Odaiba in July 2011, and the flagship shop in Omotesando this past April. All have been met with continuous queues and immense popularity.
For this new venture, Bill Granger chose Hawaii, a mecca for beach lovers, as his next location. The restaurant will be situated right on Waikiki Beach, one of Hawaii's most iconic spots.
Bill shares, "I never imagined I would receive such strong stimulation and inspiration in Hawaii." Under a new concept that fuses the beach cultures of the world with Hawaii's own surf culture, the restaurant will introduce casual cafes and bars for the first time and feature unique Hawaiian-inspired menus. It is poised to be the ultimate expression of "bills," celebrating its 20th anniversary next year.
This new restaurant invites guests to savor the flavors and atmosphere of "bills" amidst the abundant sunshine, gentle breezes, and natural light. It is set to become an unmissable destination for any visit to Hawaii.
