Hokkaido's Original Baked Cheese Tart Specialty Shop Opens Inside Kita-Senju Station
In April 2016, BAKE opened its tenth domestic store, a specialty cheese tart shop named "BAKE CHEESE TART Kita-Senju," inside Tobu Skytree Line's Kita-Senju Station.

Our Signature Baked Cheese Tart
"BAKE CHEESE TART Kita-Senju," which opened in Kita-Senju in April, is a "specialty shop for freshly baked cheese tarts." The distinctive texture, a combination of a crisp cookie crust and a fluffy cheese mousse, is the result of BAKE Co., Ltd.'s dedication.
Three types of cream cheese are used in the cheese mousse. Hakodate-produced cheese, known for its light flavor; Betsukai-produced cheese, boasting the nation's top raw milk production and a rich taste; and French cheese with a stronger saltiness are blended in perfect balance to create a unique deliciousness. The cookie crust undergoes a "double bake" – baked separately from the cheese mousse – to achieve an even crispier texture.
The store is integrated with the kitchen, allowing customers to always purchase "freshly baked" tarts. The store design was handled by product designerYota Kakuda.
Kakuda explained the store's design concept: "Through special acrylic processing, we've created a gradient effect, realizing a counter that appears to float. Other design elements within the store have been minimized to emphasize only the counter and the cheese tarts hovering above it." The design achieves both a color scheme that simply conveys the warmth and aroma of freshly baked goods, and a transparency that allows anyone to glimpse the manufacturing process, offering a sense of deliciousness and reassurance visible from the outside.
Despite the compact space, the staff have a comfortable working environment, and it's a pleasure to watch the cheese tarts being baked and emerging from the ovens right before your eyes. While freshly baked is wonderful, chilling the tarts in the refrigerator gives them a denser, cheesecake-like texture, and freezing them transforms them into a delightful cheese ice cream.
Following the opening of its first store in Tohoku, Sendai, in March, the Kita-Senju store became the tenth domestic location in April. Internationally, BAKE has stores in Thailand, Hong Kong, and South Korea.
