Iidaya, a specialist in kitchenware in Kappabashi, Tokyo, has released the "Ever Grater," the third installment in its original "Ever" series of kitchen tools. This domestically produced grater allows you to enjoy a fluffy texture with various ingredients.

A New Invention from a Long-Standing Kappabashi Institution
Iidaya was founded in Asakusa, Tokyo, in 1912. The "Ever Grater" was launched by Yuta Iida, the sixth-generation owner, who arrived at its design after comparing over 300 types of graters from around the world.
The "Ever Grater" is characterized by its ability to grate various ingredients into a fluffy texture without requiring much force. When ingredients are grated finely and become fluffy, they come into contact with more air, enhancing their flavor. This makes it possible to grate not only ginger, which tends to leave fibers due to its strong structure, but also garlic, cheese, chocolate, yams, and lemon into a "fluffy" consistency.
The secret to this "fluffy" texture lies in the grater's blades. The closer the blade's edge is to being flat, the finer and fluffier the grated ingredients become. However, if the blades are too close, the ingredients won't catch, making it impossible to grate them. Iidaya developed the "Ever Grater" to achieve three conditions: texture, ease of use, and long-lasting sharpness. After more than 20 prototypes, the "Ever Grater" was completed.
The "Ever Grater" is smartphone-sized, fits comfortably in the hand, and all processes, from molding to finishing, are handled domestically. It allows you to easily grate a variety of ingredients, expanding your culinary possibilities.
