Preserving Unchanging Quality Through Time-Honored Techniques
From small paring knives to specialized blades for ham, salmon, tomatoes, butter, cheese, and grapefruit—Déglon offers a dedicated knife for every task. We delve into the brand behind these exceptional tools.
Text by Satsuki Wakabayashi
Déglon, a brand of kitchenware, was born in 1921 in the town of Thiers, France. For four generations, the company has upheld its tradition and quality. Its specialization has made it an indispensable presence for butchers, fishmongers, pastry chefs, and cheesemongers across France.
For instance, there are cheese-specific knives designed to prevent cut cheese from sticking, and other cheese knives with perforated blades for slicing soft cheeses like Camembert. Additionally, the semi-circular, serrated tomato knife, developed by founder Jean Déglon in the 1930s, is ideal for slicing tomatoes thinly.
The collection also includes tools for coring oysters and zucchini, peelers, and fish descalers, all characterized by functional, beautifully minimalist designs. Such a comprehensive range of specialized tools is a testament to France's rich culinary culture.
