Chefs' Imagination Brought to Life by the Plates' Characteristics

Limoges, a town renowned for its porcelain alongside Sèvres, is home to Bernardaud, one of France's leading prestigious porcelain makers. Founded in Limoges in 1863, Bernardaud became a purveyor to the imperial court of Napoleon III. Since winning a gold medal at the Paris Exposition of 1925, it has received numerous international accolades. Today, its elegant porcelain continues to be widely favored by royal families worldwide, as well as by top hotels and Michelin three-star restaurants.

The new "ECUME" series, while appearing simple at first glance with its pure white form, features a delicate texture on the rim, inspired by the white foam of waves washing ashore.

A hallmark of Bernardaud plates is their exceptionally flat surface for serving food. Top chefs, drawing on their imagination, plate their dishes with free expression, as if the tableware were a blank canvas.

Shohei Shimono

Shohei Shimono, owner and chef of the French restaurant "Anu" in Hiroo, was responsible for the plating. Chef Shimono shared his philosophy on cuisine: "I express things 'as they are' in each moment. My cooking is fluid. I believe that cuisine itself evolves daily with the times. It may advance or regress, or move back and forth. Identifying this, I offer dishes that harken back to past eras or represent the cutting edge. To allow guests to enjoy a comparison of a single ingredient, I also offer a course featuring two dishes served simultaneously, each prepared with a different approach—in terms of cooking method, temperature, or era."

In recent years, Bernardaud has released numerous special collections in collaboration with artists from various fields. Expanding its reach beyond tableware to include jewelry and interior decor, the brand continues to convey the multifaceted charm of porcelain.
