A "Spice Magic" Like Never Before. Opening in Ginza, Tokyo, on November 16, 2019.

Opening in Ginza, Tokyo, are "SPICE LAB TOKYO" (hereinafter "Spice Lab"), a Modern Indian Cuisine restaurant that will overturn the very concept of Indian food with a "spice magic" never before seen or tasted in Japan, and its accompanying bar, "THE GREY ROOM" (hereinafter "Grey Room").

As the first establishment of its kind to bring Modern Indian Cuisine to Japan, "Spice Lab" and "Grey Room" will offer a new cuisine and bar experience, fusing Indian modernism with Japanese sensibility.

Appointed as Executive Chef is Tejas Sovani, a remarkably young 33-year-old who previously served as Assistant Executive Chef at India's luxury hotels "The Oberoi" and "AMAN," and also trained at Copenhagen's "noma."

With dishes brimming with fresh surprises through sophisticated spice usage and a stylish, high-quality ambiance, guests can savor a "Ginza experience" that can only be found here in Ginza, nowhere else in the world.

"Spice Lab" will feature an adaptable "Modern Indian Cuisine" that harmoniously blends and adapts the culinary philosophies of both Japan and India, utilizing Japan's abundant seasonal ingredients and traditional Indian spices.

While honoring Indian culture and tradition in its cooking techniques, flavors, and presentation on the plate, the restaurant masterfully wields the magic of spices to create a new style of Modern Indian Cuisine, elevating it to an elegant, gastronomic realm entirely distinct from Indian food as we know it.

Meanwhile, "Grey Room" will offer an original style of afternoon tea infused with the fresh tastes of India, the world's largest producer of spices and tea, during the daytime.

During tapas bar time, guests can enjoy original cocktails of a new genre using Indian spices, as well as bar food prepared by the chefs at Spice Lab.

The interior, unified by a chic design, includes rare terrace seating in Ginza. This bar, with its expansive views, pursues a neutral comfort that reflects the changing expressions of Ginza throughout the day. Guests can savor an innovative cocktail menu alongside the unique night view, befitting its location in Ginza 6-chome.
