Dom Pérignon: Aged for Over 8 Years

Dom Pérignon carries on the pioneering spirit of the monk Dom Pierre Pérignon, who dedicated his life to creating wines of unparalleled perfection at the Abbey of Hautvillers in the Champagne region of France at the end of the 17th century. It is hailed as "the ultimate art," embodying the bold declaration to "create the world's finest wine."
P1 signifies reaching its peak of maturity (plénitude), with the first plénitude of Dom Pérignon requiring at least 8 years of aging. The second plénitude, however, involves a period of over 16 years, a difference of 8 years in aging time.
While regulations mandate a minimum of 15 months for non-vintage and 3 years for vintage wines to age in the cellar, Dom Pérignon stands out with its exceptionally long aging periods. The "Plénitude Dinner" offers a rare chance to compare how the characteristic fresh fruit aromas and mature notes of Dom Pérignon evolve over 8 years of aging.
