The duck served at "Juban Na Camo Kuro" is "Saijo Kamo," raised on a farm in Okura Village, Mogami District, Yamagata Prefecture. The harsh winters and heavy snowfall in this region foster the development of plump, fatty ducks. Through various innovative breeding methods and feeding them rice from the same prefecture, known for its sweetness, the "Saijo Kamo" develops with its characteristic mildness and a rich, sweet fat.

To bring out the new charms of this Saijo Kamo, "Juban Na Camo Kuro" has appointed a chef with a background in Chinese cuisine. You can savor a full-course meal that incorporates Chinese techniques with hints of Asian flavors.

Another feature of "Juban Na Camo Kuro" is the enjoyment of food and drink pairings. The pairings, supervised by Motohiro Ogoshi, one of Japan's leading sommeliers, consist of seven selections including wine, shochu, and tea. These pairings further enhance the umami of the Saijo Kamo and build anticipation for the next dish.
