Special Dinners Paired in Reverse to Match the Nuances of Each Vintage
HOSHINO RESORTS RISONARE YATSUDATAKE will launch "The Ultimate Wine Stay," an experience allowing guests to fully savor the rare wines of the Domaine Mie Ikeno winery, available weekdays from January 5 (Tuesday) to March 31 (Wednesday), 2021.

In 2006, HOSHINO RESORTS RISONARE YATSUDATAKE partnered with the Domaine Mie Ikeno winery, taking a step towards becoming a "wine resort" offering a holistic wine experience, including winery tours and meals designed to complement the wines.
Domaine Mie Ikeno, on the other hand, is a winery where winemaker Mie Ikeno cultivates grapes using reduced pesticide cultivation and handles the entire winemaking process, aiming for wines that capture the essence of the Yatsugatake nature in a bottle.
The newly introduced "Ultimate Wine Stay" offers a special opportunity to indulge in rare wines, including back vintages of Pinot Noir and half bottles not available for general sale.
The dinner, served at the main dining room "OTTO SETTE," features a special menu paired with Pinot Noir from different vintages. Guests can experience a "vertical tasting" of the 2016, 2017, and 2018 back vintages, appreciating the distinct flavors that vary with each year's grape condition and aging, alongside dishes conceived as pairings for these wines.
The 2017 vintage, with its rich berry fruitiness and silky texture, is paired with pan-seared foie gras served with caramelized apples. The 2018 vintage, characterized by its delicate, astringent tannins and deep acidity, is matched with a pasta dish featuring venison in a red wine ragu sauce.
For the 2016 vintage, where the ripe fruitiness from the maturation period is directly expressed in the wine, a main course of roasted beef with a robust sauce is paired with semi-dried Kyoho grapes, offering a texture and aroma close to fresh fruit.
The maisonette-style suite room, "Wine Suite Maisonette," is coordinated with a Bordeaux color palette. Inside, guests will find half bottles of "Pinot Noir," "Chardonnay," and "Merlot" from the same vintage, which are not available for general sale.
Accompanied by smoked nuts and fruit compote, guests can leisurely savor the differences in taste among the varietals, all produced under the same natural conditions of climate and soil.
Furthermore, guests can watch videos related to Domaine Mie Ikeno at any time on the in-room television. These include footage of the vineyards not publicly shown and interviews with Ms. Ikeno about her winemaking philosophy, enriching the wine-tasting experience.
