Matsutake mushrooms, the autumn flavor of Shinshu. At HOSHINOYA Karuizawa, with its concept of "staying in a village in the valley," we've focused on the idea that the rich aroma of mushrooms and the aged scent of wine are a highly compatible pairing, as discussed among sommeliers, and have planned "An Elegant Moment of Matsutake Mushrooms and Champagne."
The plan offers matsutake mushrooms in three settings: a "Matsutake Mushroom Breakfast" enjoyed while gazing at the rice terraces in the morning, a "Matsutake Mushroom Mont Blanc" as a snack during the day, and "Matsutake Mushroom Appetizers" to savor in the comfort of your room at night. A sommelier selects the champagne to complement each preparation.
At the terrace seats of the main dining room, "Nihon Ryori Kasuke," which face the rice terraces, guests can enjoy a six-course breakfast entirely dedicated to matsutake mushrooms. You can savor matsutake mushrooms in various preparations, including "Charcoal-Grilled Matsutake Mushrooms," which maximizes their aroma, and "Matsutake Mushroom and Chicken Congee," where charcoal-grilled matsutake mushrooms are added to a chicken broth congee.
Additionally, a full bottle of "Dom Ruinart 2007" is provided as the champagne. The aged complexity and aroma of the champagne harmonize with the full-bodied, robust scent of the matsutake mushrooms. You can spend a luxurious morning while listening to the crisp autumn breeze and the sound of water flowing through the rice paddies.
For an afternoon treat, indulge in the "Matsutake Mushroom Mont Blanc." This charming dessert, made by incorporating dried matsutake mushrooms in powder form into a chestnut cream and meringue base, releases a rich matsutake aroma with every bite. Its addictive blend of sweetness and fragrance pairs exquisitely with a subtly sweet champagne.
In the evening, enjoy matsutake mushroom appetizers and champagne in your room. A selection of appetizers featuring autumn flavors, such as "Matsutake Mushroom and Duck Terrine" and "Crispy Fried Matsutake Mushrooms," are served. Three half-bottles of champagne with distinct flavor profiles are provided, allowing you to relax in your room, perhaps on the sofa, while gazing at lanterns floating on the water or the subtly lit trees.
