Aged for two years after 300 hours of milling: Tatenokawa "Extreme" offers unparalleled perfection in aged Japanese sake.

Tatenokawa Brewery has released a limited edition of "Tatenokawa Junmai Daiginjo Extreme [2019 Vintage]," which is the Junmai Daiginjo sake "Extreme," with a rice-polishing ratio of just 8%, further aged for two years at sub-zero temperatures.

Aged for two years, its aroma and delicacy expand, deepening the finish and enhancing its mellowness.

Founded in 1832 in Yamagata Prefecture, Tatenokawa Brewery introduced "Extreme" in 2013. Using "Yamada Nishiki" from Hyogo Prefecture, known as the 'king of sake rice,' the rice was milled for approximately 300 hours (12.5 days) to achieve a polishing ratio of 8%, reducing it to a diameter of just 2mm. In addition to the ultimate clarity derived from these meticulously prepared ingredients, "Extreme" has already captivated many with its exquisite balance of umami and richness.
The brewers' skills in crafting sake rice with an extremely low polishing ratio of 8% have matured over the years. The "Extreme" brewed in 2019 was an unprecedented success, and due to the exceptional potential of the sake itself, it was specially aged below freezing point, considered optimal for long-term preservation of Japanese sake. It is now born as "Tatenokawa Junmai Daiginjo Extreme [2019 Vintage]."
Despite its single-digit polishing ratio, the sake possesses a rice umami. Aging "Extreme," which has a delicate and transparent profile, for approximately two years has expanded its aroma and delicacy, deepened its finish, and added a mellower flavor.
For a pairing that complements this aromatic Junmai Daiginjo, cheese is recommended. With its profound aroma and lingering finish, "Tatenokawa Junmai Daiginjo Extreme [2019 Vintage]" creates the ultimate pairing, enhancing each other on a higher level. We especially recommend trying a marriage with strongly flavored blue cheese or rich Gouda cheese.
