Gentle Sweetness and Aroma Born from Doburoku and Select Cacao Nibs

WAKAZE, a sake brand that brews innovative "SAKE" by incorporating diverse ingredients while utilizing traditional methods, operates in Sangenjaya, Tokyo, and Paris, France. From its Sangenjaya brewery, "Sangenjaya Doburoku ~ Chocolate ~" has been released. This beverage is created by adding "cacao nibs"—cacao that has been crushed and roasted—to the doburoku brewing process for fermentation.
For this creation, CRAFT CHOCOLATE WORKS, a craft chocolate specialist that handles everything from sourcing cacao beans and roasting to producing finished chocolate bars, selected cacao nibs from Uganda, known for their pleasant aroma, from among various origins. The resulting flavor features a smooth, rice-derived texture, harmonizing the aroma and richness of cacao with the gentle sweetness of rice malt. It can be enjoyed as an adult chocolate drink during the colder months.
