Savor Authentic, Fresh Vietnamese Cuisine: 'Taste of Amanoi' at Aman Tokyo for Five Days Only
Following last year's successful event, this annual special program, which invites chefs from Aman resorts around the world to present authentic cuisine from their respective locations, will be held for five days from Friday, September 13 to Tuesday, September 17, 2019. This year, chefs from 'Amanoi' in Vietnam will be invited for 'Taste of Amanoi'.

A special event at Aman Tokyo, an oasis in the bustling city, invites chefs from Aman resorts worldwide to present authentic dishes from their locations. This time, 'Taste of Amanoi,' offering a chance to savor fresh Vietnamese cuisine, will be held for five days from Friday, September 13 to Tuesday, September 17, 2019.
Nestled between a national park and a marine protected area, Amanoi is situated along a scenic coastline overlooking Vinh Hy Bay, renowned as one of Vietnam's most beautiful, with Nui Chua National Park as its backdrop. Vietnam, surrounded by stunning nature, is a land famous for its fresh seafood, raw vegetables, and abundant herbs. Vietnamese cuisine, characterized by its delicate flavors influenced by Chinese and French traditions, continues to captivate many.
For 'Taste of Amanoi,' Chef Bernardo Corra, Executive Chef of Amanoi, will be invited to present fresh and authentic Vietnamese dishes.
Hailing from Mexico, Corra embarked on his culinary journey at the age of 14. He honed his skills at renowned restaurants globally, including the three-Michelin-starred 'Geranium' in Denmark and the two-Michelin-starred 'Atera' in New York. His time at the three-Michelin-starred 'RyuGin' in Tokyo further cultivated not only his techniques but also his dedication to food, truly dedicating his life to the culinary arts. After joining Aman, he gained experience at Amanyara (Providenciales, Turks and Caicos Islands) and Amangiri (Utah, USA) before becoming Executive Chef at Amanoi in 2018. He now aims to convey the excellence of Amanoi's cuisine at Aman Tokyo.
At 'Taste of Amanoi,' guests can enjoy Vietnamese staples like pho and fresh spring rolls (goi cuon). However, the chef's recommended dish is bun cha, a noodle dish originating from Hanoi. This rice noodle dish, served with a light dipping sauce, features grilled pork and is enjoyed with fresh vegetables and herbs. Chef Corra notes its similarity to pork grills from his native Mexico. 'Discovering dishes that taste the same yet are enjoyed in completely different ways on opposite sides of the globe is incredibly exciting for me. I am very much looking forward to sharing this dish with you in Tokyo,' he commented.
