Introducing "GOKUGEN," a Luxury Sake Perfect for Pairing with Food

Luxury sake brand "MINAKI" has been born, with a concept of "enriching the flow of time and coloring each moment." What is the taste of its signature and debut release, "GOKUGEN," which has already been decided for introduction in Michelin-starred restaurants and high-end hotels and ryokans?

Luxury sake brand "MINAKI" is born. Simultaneously, "GOKUGEN," MINAKI's signature work, is released exclusively online.
"GOKUGEN" aimed for a balance between an elegant sake flavor and clear umami. This led to an ultra-high rice polishing ratio of "17%." It is a sake luxuriously made from only a small portion of the center of Hyogo Prefecture's "Yamada Nishiki," which is said to be of the highest grade.
In the sake industry until now, a rice polishing ratio of around 35% was highly regarded as the pinnacle of deliciousness. However, for "GOKUGEN," the rice was polished down to half that, 17%, over more than 200 hours, creating a mellow flavor free of impurities, without regard for the effort or cost.
The heart of Yamada Nishiki, which has low levels of lipids and proteins that cause impurities, was luxuriously polished to 17% and slowly fermented. The resulting "GOKUGEN" is characterized by its gorgeous ginjo aroma and a delicate yet crisp taste.
With a full-bodied aroma like fruit that enhances the atmosphere, a sophisticated sweetness, and complex umami, "GOKUGEN" fades with a subtle, phantom-like acidity, true to its name. Its lack of impurities and soft mouthfeel make it perfect as a food-pairing sake, and it can be enjoyed with a wide variety of ingredients.
