13 Programs to Satisfy Both Appetite and Curiosity

This program, launched in 2015, is an annual event highly regarded among wine connoisseurs. This year marks its 10th iteration and coincides with the hotel's 20th anniversary, with a lineup befitting the celebratory year.
The theme for the Wine Program is "Exceptional." It comprises 13 dinner events where guests can experience exquisite pairings of wines meticulously selected by the sommelier team and superb dishes created by the chefs of Mandarin Oriental, Tokyo. Prepare for an unparalleled, sublime wine dinner experience, woven from the harmony of exceptional wine, cuisine, and service.
Typically, wine dinners are presented by pairing wine with existing dishes. However, at Mandarin Oriental, Tokyo's Wine Program, chefs and sommeliers engage in extensive discussions to meticulously construct the food and wine pairings from scratch. This collaborative effort results in an exceptional experience that cannot be found elsewhere.
Indispensable to this program is the hotel's sommelier team. Mr. Akihiko Nosaka, Director of Wine, is a rare Japanese sommelier holding the Advanced Sommelier Certificate from The Court of Master Sommelier, and he won the "10th All Japan Best Sommelier Competition" in 2023.
This team, including Mr. Nosaka, is composed of outstanding members among the over 20 Japan Sommelier Association certified sommeliers, boasting a high level of knowledge and service skills.
Led by Mr. Nosaka, the team includes Sommelier Supervisor Ms. Maika Yamamoto, winner of the "Pommery Sommelier Competition 2023," and Chef Sommelier Mr. Daiki Ikeda, who was the runner-up, as well as the promising Sommelier Supervisor Mr. Daiki Suzuki.
Furthermore, Senior Chef Sommelier Mr. Fumihiko Kamo, who previously worked at a Michelin three-star restaurant in France, was awarded the Chevalier de l'Ordre du Mérite Agricole in France in 2024 for his long-standing contributions to culinary culture, recognizing his distinguished achievements.
The hotel's restaurants feature cuisine prepared by Michelin-starred chefs, with their quality recognized globally. The sommelier team provides expert wine pairings for a diverse range of culinary genres, including French, Italian, and Cantonese, across the hotel's various restaurants and bars. The pairings of cuisine and wine, created collaboratively by these top-tier chefs and sommeliers, are truly works of art.
Beyond the exquisite flavors born from the marriage of food and wine, the program's charm lies in the sommelier's explanations and the stories about the wine's origin and history, offering guests a deeper understanding of culinary culture. We invite you to savor this exceptional experience, crafted by the outstanding sommelier team and chefs of Mandarin Oriental, Tokyo.
