A Game Menu Elevated with Yukawa Tan's Unique Flavors

Bleston Court Yukawa Tan (hereafter, Yukawa Tan), the main dining room at HOSHINO RESORTS Karuizawa Bleston Court, has launched "King's Game," a special dish once reserved for royalty, available from Tuesday, December 1, 2020, through Monday, January 11, 2021.

Carefully Selected Wine Pairings

With the opening of hunting season, game becomes abundant in winter. Once again, the season for Yukawa Tan's "King's Game" has arrived.
Among the game dishes featured, the luxurious "Pâté de Roi" and "Rabbits Royale" were once special dishes created exclusively for French royalty. Both dishes are named "king's" dishes not only because their ingredients are rare but also because they require immense time and effort to prepare. Yukawa Tan calls these "King's Game" and has crafted them into its own unique flavors.
Pâté de Roi
The "Pâté de Roi" is a layered creation featuring four or more types of game, such as venison, wild boar, wood pigeon, and pheasant, along with truffles, foie gras, and fruits, all encased in a pastry crust. Its distinctive feature is the varied preparation of each game meat, whether minced or left in morsels, depending on the type and cut. The ingredients are arranged and the cooking temperature is carefully controlled to ensure that all meats are cooked to perfection.
Using a specially crafted, ornate mold, the cross-section of the pie, sliced by staff, reveals beautiful strata of various ingredients, forming abstract patterns and offering a diverse range of game flavors.
Rabbits Royale
The classic French dish "Rabbits Royale," also known as the "Queen of Game" due to its challenging preparation, uses rabbit meat, which tends to dry out and toughen easily, requiring significant time and skill to cook deliciously.
At Yukawa Tan, rabbit meat is simmered with foie gras and truffles for two days until meltingly tender. It is then rested for a day to allow the flavors to meld. Subsequently, a complex sauce is created over three days, layering in the aromas of various ingredients, including alcohol, aromatic vegetables, herbs, and spices.
The accompanying wines are equally special. Served from a magnum bottle is the "1998 Pommard Premier Cru 'Les Rugiens' Domaine Parent," a representative red Burgundy, the king of wines, aged for over 20 years. Guests can also select from approximately 2,000 bottles of wine stored in a special cellar located within Bleston Court Karuizawa.
