Palace Hotel Tokyo's French Restaurant 'Crown' Celebrates 50th Anniversary with Special Menus
Crown, the French restaurant at Palace Hotel Tokyo, has long been a pioneer in Japan's French culinary scene. To commemorate its 50th anniversary last September, a special menu will be offered for a limited three days, from Thursday, March 12th to Saturday, March 14th.

A Dish Inspired by Auguste Escoffier, the Father of Modern French Cuisine
Tokuichiro Tanaka, the first executive chef of Palace Hotel, traveled to France in 1929. He honed his skills at world-class establishments like the Hotel Ritz, receiving profound inspiration from Auguste Escoffier, the father of modern French cuisine.
The dish pictured is 'Sole Bonne Femme.' Based on Escoffier's recipes brought back from France, it is a signature dish of Crown that has been loved for many years.
To mark the 50th anniversary, this beloved dish will be revived for three days only as part of a course menu. It is a masterpiece, meticulously prepared with generous amounts of fine butter, finished with a rich sauce and pan-seared to a golden hue. The decadent sauce coats the tender fish, creating a fragrant and full-bodied flavor.
The current chef at Crown is Manabu Ichitsuka, a chef with a brilliant career and proven skill, including a victory in the 'Maître Cuisinier de France "Jean Sirynger Cup"', a competition for top French chefs.
Chef Ichitsuka presents two courses under the theme of 'Tradition and Innovation': the 'Neo-Classic Course,' a modern interpretation of traditional Palace Hotel dishes, and the 'Creative Course,' crafted with the current Crown's innovative sensibility.
The 'Creative Course' features dishes that incorporate Asian ingredients and spices such as anise and horseradish as accents, offering a diverse range of flavors within a simple yet luxurious presentation.
