At the end of the 17th century,Champagnein the region, at the Abbey of Hautvillers, located on the hills west of the Marne, the blind monk Dom Pierre Pérignon served as cellar master. Over approximately 47 years, he would develop the technique of assemblage (blending), later known as the Champagne method. This method involved blending varietals, crus, and vintages to produce a high-quality sparkling wine, regardless of the year's harvest. The reputation of this exquisite wine, crafted over four times the usual time for winemaking at the time, soon reached the ears of King Louis XIV of France, and it is said to have graced his table. His inspiration, relentless passion, and refined sensibility are still inherited by Dom Pérignon today.

The Ideal of the Finest Champagne



Crafted with exceptional skill, overwhelming passion, and richness, Dom Pérignon is undoubtedly the most renowned champagne of our time. The first vintage of Dom Pérignon was in 1921, with its initial release in the 1930s. Its style, made from superior grapes from excellent plots in favorable years, emphasizes long aging. After more than seven years of aging in the bottle before disgorgement (where it develops complex umami from contact with the lees), it possesses a surprisingly fresh impression due to the overwhelming power of the grapes.
Depending on the vintage, there are years that produce only white or only rosé. Precious vintages selected by the Chef de Caves are aged for over 12 years as "Oenothèque."

The champagnes, increasing in complexity and awaiting perfect balance, rest in the depths of the world's longest underground cellars, approximately 28 km long (partially off-limits). This labyrinth is awe-inspiring, and if you're lucky, you might hear the sound of bottles bursting with a "pop" due to the pressure balance. There is ample space to store bottles for long aging.

"The brilliance of Dom Pérignon lies in its ability to walk the royal road of champagne, pleasing many palates. Simultaneously, its depth of aftertaste and excellent balance are extraordinary. Decanting it further reveals its complexity. Compared to the 2000 vintage, the 1999 has stronger acidity. The 2000 shows more potential," says wine journalist Mr. Saito. Here lies the ideal of the finest champagne.

A Richness That Evokes Memories of Travel



Where does its complexity come from? One sip, another occasion, at a restaurant, at a party. It is always fresh, with concentrated flavors swirling in the mouth. Never the same image twice: sometimes it seems packed with tropical flowers and fruits from southern lands, other times with the chaotic spice of Marrakech's Djemaa el-Fna, the yellow and white flowers of Madagascar, the air of the city upon exiting Delhi airport, the incense burned in a Paris gallery, an earthy atmosphere, and a faint hint of peat smoke. An incredibly long finish. Frankly, it is dazzlingly "rich."

Feel the Overflowing Sensuality



Amidst the pouring rain, after leaving the tasting at Moët & Chandon, I headed to the Abbey of Hautvillers, where the blind monk Dom Pierre Pérignon served as cellar master. Unable to survey the beautiful gardens and the landscape spread out below, he focused solely on his senses, immersing himself in drawing out the hidden potential of the grapes and offering prayers to God. In the days of repeating the same task over long years, perhaps he felt an overflowing sensuality in the wine's taste and saw the presence of God in it. I left the Champagne region with this thought.
