A New Sake Experience Where Aroma and Flavor Unfold with the Butter's Melt
CANOBLE, a butter brand developed by National Department Store, has released various gourmet butters using different ingredients.
Now, CANOBLE has turned its attention to Japanese sake. By blending sake into fermented butter, the momentary elements of sake, such as aroma and flavor, slowly spread through the palate in time with the butter's melt, offering a new sake experience unlike any before. Furthermore, depending on the type of sake rice and polishing ratio, the aroma profile and how it spreads in the mouth will differ, making it appealing to enjoy each unique characteristic.
"DÉGUSTATION [SAKE]" uses nine carefully selected Japanese sakes. The lineup includes premium junmai sakes from seven domestic breweries, such as "Kubota Junmai Daiginjo," alongside "DASSAI Junmai Daiginjo 23," junmai sake "WAKAZE THE CLASSIC" brewed in Paris using Camargue rice cultivated in France and Burgundy white wine yeast, and a special blend of "Koji Amazake" specially created by a patissier, each with its own distinct character.
The aroma of Japanese sake is often compared to the scent of fruits and flowers. In "DÉGUSTATION [SAKE]," the sake's fragrance is further enhanced when layered with the butter's milky richness. Taking a bite, savoring the taste, and then adding a pinch of salt to the mouth amplifies the milky sweetness, allowing for a more profound sake flavor.
