Hashiri, a kaiseki sushi restaurant that has earned three consecutive Michelin stars in San Francisco, has opened "Hashiri Shimokitazawa," a new concept offering a more casual experience of sushi and wine, at reload in Shimokitazawa on June 30th.

Dishes Featuring Seasonal Ingredients Paired with Wine by an In-House Sommelier

"Hashiri" began as a members-only sushi establishment in Daikanyama in 2013. Driven by a desire to "spread Japanese food culture to the world," it expanded to San Francisco in 2016. "Hashiri San Francisco" is known for offering the most exquisite sushi course meals in the San Francisco Bay Area, blending traditional Japanese elements with a modern, luxurious ambiance.
"Hashiri Shimokitazawa" offers a menu that, like its San Francisco counterpart, showcases seasonal ingredients and features innovative, forward-thinking dishes that incorporate tradition while pushing boundaries.
For this opening, sushi chefs and sommeliers have returned from "Hashiri San Francisco." Maintaining the core concept of "Hashiri," the new establishment offers sushi-centric courses in a casual setting that complements the atmosphere of Shimokitazawa, along with wine pairings curated by a sommelier from a selection of 120 wines.
The chef's omakase course, which expresses the changing seasons, features carefully selected ingredients from across Japan, presented with artful direction.
The restaurant's name, "Hashiri," refers to the season when the first of the year's produce becomes available. True to its name, the menu changes with the seasons, offering exquisite dishes crafted from the finest ingredients of the moment.
The wine selection spans a wide range, from classic French Burgundy and Japanese wines to New World vintages, including natural wines.
Guests can order by the glass to complement their meal or mood, and bottles can also be purchased from the wine cellar. Consulting with the in-house sommelier is a highlight, with access to over 7,000 bottles of wine and champagne beyond the restaurant's stock, ensuring a delightful discovery of personal favorites.
From 9 PM onwards, the space transforms into a modern, bar-like atmosphere, offering a distinct ambiance from traditional sushi establishments.
The restaurant features an open facade facing the street of Shimokitazawa reload, with an interior characterized by a grayish, material-focused design and a 10-seat counter.
The entire space is imbued with the desire to offer a casual sushi and wine experience, creating a new kind of sushi restaurant that feels approachable yet uncompromising in its culinary offerings.
