This Year's Christmas Cake: A "Mont Blanc Tree" Lavishly Made with Japanese Chestnuts

Aman Tokyo is releasing its original Christmas cake and stollen for the 2018 festive season. These seasonal sweets are perfect for parties or as gifts for loved ones.

A Traditional Stollen Reimagined with an Original Recipe
Aman Tokyo, which opened as Aman's first urban hotel at the end of 2014, is introducing two seasonal sweets created by its pastry chef, Yoshihisa Miyakawa.
Chef Miyakawa began his career in 1999 at a French patisserie in Tokyo. He honed his skills in Paris at Ladurée and Belle Époque before returning to Japan, where he worked at École Culinaire and Mandarin Oriental Tokyo, among others.
He has achieved numerous accolades in various competitions, including winning the "Japan Cake Show Tokyo" in the chocolate confectionery category in 2007.
Chef Miyakawa, known for his creative and elegant creations, has crafted this year's Christmas cake using an abundance of Japanese chestnuts. Sourced from Kumamoto, renowned for their superior quality, these large chestnuts are exceptionally pure in flavor, boasting a deep, subtle sweetness reminiscent of traditional Japanese confections and a rich chestnut aroma.
A light, crisp coconut meringue forms the base, layered with a smooth custard and whipped cream infused with Madagascar vanilla, all coated in a Japanese chestnut paste. The Christmas tree-shaped confection, a testament to the patissier's artistry, encases six whole Japanese chestnuts, allowing for the full enjoyment of their exquisite flavor.
Meanwhile, the traditional Christmas confection, stollen, is presented in Aman Tokyo's original recipe. The dough, enriched with liqueur-soaked dried fruits such as oranges, raisins, and figs, along with almond paste, is baked to a moist perfection and finished with a coating of refined, subtly sweet Japanese 'wasanbon' sugar.

The "Stollen Chocolat" features spices like cardamom and nutmeg, paired with dried apricots and cranberries—fruits that complement chocolate well—offering a bittersweet, adult flavor profile.
Both of Aman Tokyo's Christmas sweets offer a refined taste experience. The very act of contemplating which confection to choose for the holiday season is a moment of pure bliss.
