Hoshino Resorts L'Hotel de Hiei is an auberge built on the sacred grounds of World Heritage site Mt. Hiei Enryaku-ji Temple, overlooking Lake Biwa. Here, a "Vinegar & Veggie Breakfast," featuring fermented Omi vinegar and vegetables, will be offered for a limited time this summer.

A Vinegar and Vegetable Breakfast at a Refreshing Auberge Overlooking Lake Biwa
Hoshino Resorts L'Hotel de Hiei, overlooking Lake Biwa, will offer a "Vinegar & Veggie Breakfast" featuring Omi's fermented "vinegar" and vegetables from June 1 (Fri) to August 31 (Fri), 2018, for a limited summer period. The Omi region surrounding Lake Biwa is an area blessed with temperatures and humidity ideal for fermentation. L'Hotel de Hiei has been engaged in a project called "Fermentation Gastronomy" to convey the region's traditional fermented food culture. The "Vinegar & Veggie Breakfast" is one initiative within this project.
Especially in urban areas, summers are marked by intense heat, leading to decreased appetite due to summer fatigue. The "Vinegar & Veggie Breakfast" was conceived as a menu to combat summer fatigue enjoyably, by savoring a vinegar-based breakfast in the cool environment of Mt. Hiei, which stands at an altitude of 650 meters. At the Yamadoko Cafe, which faces Lake Biwa, "drinking vinegars" are available from 5:00 AM to 7:30 AM, perfect for waking up. Guests can choose from four types of drinks, including sour drinks made with apple cider vinegar and adberry vinegar made with "adberries" cultivated along the Azuchi River on the western side of Lake Biwa.
For breakfast, served from 7:30 AM to 9:00 AM, guests will first be served an "Osu Smoothie" (vinegar smoothie) made with vinegar from "Tankai Su" in the fermentation town of Takashima, and vegetables. In addition to a recipe combining nutrient-rich yellow-green vegetables and fruit vinegar, a fruit vinegar smoothie blending root vegetables like carrots with adberry vinegar will also be available.
The breakfast salad allows guests to enjoy their greens with three types of original vinegar dressings. Options include a yuba (tofu skin) dressing blending Hiei yuba with fruit vinegar, a fruit dressing combining adberry vinegar and oil, and a ravigote-style dressing with vinegar and finely chopped vegetables. These dressings complement the seasonal vegetables, offering a delightful way to enjoy the salad. This menu, enjoyed alongside the unique flavors of the auberge, is expected to help alleviate summer fatigue.
