From Monday, June 20 to Sunday, July 3, 2016, for a limited two-week period, "P2. MEET THE ULTIMATE DOM PÉRIGNON" was held. During this time, 530 guests visited, and the event concluded to great acclaim.

A Collaboration with Restaurant NARISAWA
Dom Pérignon has released "Dom Pérignon P2-1998," a champagne aged for over 16 years. The event "P2. The Ultimate Dom Pérignon Experience," designed to savor its allure, was held and has now closed to widespread acclaim.
This event, a collaboration with "NARISAWA," helmed by owner-chef Yoshihiro Narisawa, offered a two-week journey of ultimate pairings. An entire venue was transformed into a world dedicated to "Dom Pérignon P2-1998," featuring tasting sessions and a dinner experience. The event welcomed a total of 530 guests.
Guests savored "Dom Pérignon P2-1998," described as "the most Dom Pérignon-like Dom Pérignon," aged for 16 long years. They also experienced "Satoyama Cuisine" from NARISAWA, which advocates for a sustainable food culture rooted in the "spirit of nature"—the coexistence of humans and nature—and draws from the richness of Japan's natural bounty.
Furthermore, guests explored each floor of the venue, adorned with unique artistic expressions, to experience the evolution brought about by "time" in long-aged champagne. On the second floor, they first tasted "Dom Pérignon Vintage 2006," which reached its initial peak of maturation after over eight years of aging, before moving to the third floor for the highlight: the "P2. The Ultimate Dom Pérignon Dinner Experience."
The dinner commenced with a solo tasting of Dom Pérignon P2-1998. This was followed by a tasting of NARISAWA's dishes, each designed to express one of four elements—ENERGY, INTENSITY, SENSUALITY, and PLAYFULNESS—that characterize the multifaceted nature of Dom Pérignon P2-1998. Guests enjoyed the champagne at different temperatures, each tailored to complement the corresponding dish.
Proceeding to the fourth floor, guests admired a starry sky installation, an homage to the monk Dom Pierre Pérignon (1638-1715), who was the spiritual forefather of Dom Pérignon and laid the foundation for modern champagne production.
Regarding this collaboration, Narisawa commented, "The fundamental principle is that what belongs to a place pairs best with that place. However, something as transcendent as Dom Pérignon is meant to be shared by all humanity, a champagne that travels the world. At this level, it resonates profoundly across distances and borders. I hope you will pay attention to how 'Dom Pérignon P2-1998,' which has condensed the essence of the Champagne region's terroir over 16 years, interacts and resonates with Japanese culture, aesthetics, sensibilities—nurtured through the diverse seasons between the sea and the mountains—and the flavors, tastes, and expressions of Satoyama cuisine."
