Güde Bread Knives Arrive in Japan


From Solingen, Germany—a city renowned for its blades—comes Güde, a venerable knife maker founded in 1910. Now, the online boutique Leaf & Moon, specializing in German kitchenware, introduces the company's high-end "Damascus Bread Knife," crafted by Markus Balbach, one of Germany's foremost master blacksmiths.

The Pinnacle of Bread Knives, Favored by Top Chefs


At Güde, skilled artisans meticulously craft each knife by hand through over 40 processes, from forging to polishing. The result is a knife that excels not only in function but also in its exquisite product design, earning high acclaim.

In Japan, Güde's signature Franz Güde bread knives are cherished by renowned chefs such as Yasutomo Ihara of "Zopf" and Kenichi Warita of "Ginza L'ecrin."

The Damascus series represents Güde's ultimate luxury line, created by Markus Balbach, Germany's premier master blacksmith. Its mesmerizing ripple pattern is also known as "Wild Damascus Steel."

Approximately Two Months from Quenching to Finishing


The blade is forged by layering high-carbon steel with steel containing 5-6% nickel. This is repeatedly hammered, stretched, folded, and hammered again. This process, involving over 300 layers and the blending of two types of steel, creates an exceptionally durable and resilient blade.

The handle is crafted from desert ironwood, an ancient wood fossilized over long periods in desert regions. This highly dense wood offers excellent durability and water resistance, and when polished, it reveals a stunning luster and grain pattern.

The Damascus Bread Knife, with its unparalleled beauty born from intricate patterns, captivates many knife enthusiasts. Requiring approximately two months from quenching to forging, polishing, and finishing, it stands as the pinnacle of bread knives.
