"Michel BRAS" is a brand by Kai, helmed by three-Michelin-star French chef Michel Bras, whose "Michel Bras Toya Japon" on the shores of Lake Toya in Hokkaido is his sole international outpost. Launched in 2005, the brand offers a range of items including knives, cutlery, and mandolines for slicing ingredients.

The newly introduced additions are part of the grater series, which consists of a frame and handle, with interchangeable blades. Previously, the series included three types of graters for different ingredients: triangular, round, and others. The new releases feature a micro slicer and two julienne attachments, one for approximately 2mm-wide strips and another for approximately 1mm-wide strips.

The micro slicer's key feature is its adjustable plate, allowing for precise control over ingredient thickness, from about 0.3mm to 1mm. This transforms delicate ingredients like truffles into finer, more beautiful forms, enhancing their texture and flavor.

The two julienne attachments enable the creation of finely cut strips, as thin as approximately 1mm, bringing out the best in various ingredients. Utilizing them according to texture, ingredient, and cooking method promises to further broaden your culinary horizons.
