Cast Iron's Heat Retention and Conductivity Excel at Rice Cooking
STAUB was founded in 1974 in the Alsace region of France by Francis Staub. All cast iron enamel products are made in France and are compatible with all heat sources, including induction.
La Cocotte de GOHAN is a cocotte designed for easily and deliciously cooking small portions of rice to fluffy perfection. Its rounded shape is crafted to mimic a traditional Japanese rice pot, allowing the rice to "dance" in the circulating steam. Following the earlier release of the S size (12cm, for 1 cup), the M size (16cm, for 2 cups) will be available in September. In addition to cooking rice, like other Staub cocottes, it is versatile for various cooking methods such as "simmering, steaming, and stir-frying."
While cooking rice in earthenware pots is now standard, cast iron enamel pots also offer excellent thermal conductivity and heat retention. Furthermore, the secret to delicious rice lies in the "Cylindera" (protrusions) on the underside of the lid. Water droplets generated during cooking drip vertically down the Cylindera, showering the rice evenly. This process concentrates the umami and results in fluffy cooked rice.
Enabling Beautiful Table Presentations
In addition to "La Cocotte de GOHAN," STAUB is launching a host of new products. The "Ceramic Vintage Color Series," released in September, will be available in four colors: Ivory, representing the color of ivory; Antique Grey, evoking a nostalgic atmosphere; Copper, recreating the color of bronze; and Turquoise, a gemstone hue. These will add more joy to your table's color coordination.
This "Ceramic Series" boasts excellent heat resistance, making it suitable for use in ovens (up to 300°C) and microwaves, as well as for chilling in the refrigerator or freezer (down to -20°C).
Recommended for Your Staub Collection
Released on Thursday, August 20th, the "Tomato Cocotte" is a new cocotte shaped like a "Brandywine" tomato, a variety of heirloom tomato. Although it appears asymmetrical at first glance, it is perfectly symmetrical, allowing the lid to close securely no matter which way it's placed. Made from cast iron and enamel, it can be used on direct heat or in the oven, just like a standard cocotte.
