The Art of Eating: A Dish Crafted by a French Cuisine Chef


With the spread of smartphones and social media, taking photos has become an integral part of life. While photos are now commonplace, many still turn to DSLR cameras for serious photography. However, mastering a DSLR requires a minimum level of knowledge and skill. But the HUAWEI P20 Pro, introduced here, is a high-performance smartphone that has changed the way we think about complex cameras. By supporting users with AI-assisted features, this device significantly lowers the barrier to operation, offering DSLR-level camera specifications. We asked Daiki Hiramatsu of "Restaurant Hiramatsu Hiroo," a chef of French cuisine, which can be called the art of eating, to document the process of creating dishes with the HUAWEI P20 Pro.

At Restaurant Hiramatsu Hiroo, one of their commitments is to meet directly with producers and select seasonal ingredients. They then create dishes centered around the ingredients they encounter. Simultaneously, matching these with ingredients sourced from other regions sparks new culinary inspiration. Therefore, Chef Hiramatsu visits producers whenever time permits, accumulating information to create the finest dishes possible during that season.

To create such seasonal dishes, Chef Hiramatsu traveled to Kagawa Prefecture. We asked him about his experience using the HUAWEI P20 Pro, along with sample photos.

"I don't usually take many photos. I often hire professional photographers for food shoots, and seeing their high-quality results made me feel that my own photos wouldn't be satisfactory. However, I was amazed by the camera on the HUAWEI P20 Pro. It's simply beautiful. Not just beautiful, but its rendering capability makes you want to take more pictures."

There are two main reasons why the HUAWEI P20 Pro can capture high-quality photos: its advanced camera functions and its excellent AI assistant features.

The HUAWEI P20 Pro's camera system is composed of three lenses. The main RGB lens, with the highest resolution, boasts 40 megapixels, comparable to a DSLR. The second lens, a monochrome sensor with 20 megapixels, captures and isolates delicate details of the subject in black and white. The third is an 8-megapixel telephoto lens. It allows for close-up shots with the same beauty as normal shots up to 3x zoom. In addition to zoom capabilities that reduce image noise, it supports up to 10x zoom*.

*However, please note that at maximum zoom, it becomes digital zoom, and the image quality will be lower than at 3-5x zoom.

"Since I was in a different place than usual, I took photos of scenery that touched my heart. Even casual shots turn out beautifully, so I was able to enjoy taking pictures with a lighthearted feeling."

The rendering power achieved by the triple lenses surpasses that of a typical smartphone. Sample photo 1 creates a sense of depth with the overlapping geometric wave-dissipating blocks and islands from foreground to background, resulting in a beautiful depiction of depth. The expression of different textures, such as the rough concrete surface and the contrails like drawings in white paint, along with the gradient of the sky, are of a quality that belies its smartphone origin.

In Sample 2, despite being backlit, the olive leaves are clearly captured without being overexposed, showing a sharp and defined rendering. This is a shot only possible with the HUAWEI P20 Pro's triple lenses, which can isolate different elements within a single frame.

"Olives, which are produced only in Kagawa Prefecture within Japan, were one of the purposes of my visit. Olives have different tastes depending on their color. The fruit, darkened by sunlight, is ripe and mellow (Sample 3). Green fruit are young, and their oil is pungent (Sample 4). Olive oil is made by blending both. Therefore, the characteristics of each producer are evident in the taste, which is fascinating."

The smooth bokeh effect and well-balanced, emphasized colors focus on the fruit in the foreground. This is an excellent example showcasing the camera's high specifications, whether shooting close-ups or wide shots.

"When I saw this mantis shrimp photo, I thought I could make professional photographers sweat (laughs). At the same time, I was thinking about how to best prepare this ingredient to make it delicious (Sample 5)."

"In such cases, I consider dishes based on realistic combinations rather than ideal ones. The important thing is not to create imaginary dishes. I develop new, best dishes using ingredients sourced through communication with producers."

The HUAWEI P20 Pro camera also excels at capturing fine details. Of course, the high camera specifications alone do not contribute to shots like the samples. The AI assistant function, another key factor, plays a significant role.

"A shot taken while moving. This beautiful sea and terrain nurture the delicious ingredients of Kagawa Prefecture."

Sample 6 clearly demonstrates the capabilities of the AI assistant function. This photo was taken from a moving car, but you can see how the horizon is beautifully corrected. The boundary between the road in the foreground and the sea and sky in the background forms straight lines, giving a sense of order.

By combining these two powerful functions with the user's sensibility, the scenery unfolding before your eyes is captured dramatically. What about Chef Hiramatsu's everyday scenes? We were also given special access to photograph behind the scenes in the kitchen where delicious food is created.

At Restaurant Hiramatsu Hiroo, all staff members can speak about ingredients in their own words. Like Chef Hiramatsu, they visit the production sites of ingredients whenever time allows, experiencing the ingredients born from the land in real-time. Furthermore, by tasting ingredients from the same region as those used in staff meals, they experience the flavors of the land.

"These are vegetables sent by farmers in cardboard boxes (Sample 7). We eat the ingredients that are not used in cooking. Of course, this is to enrich our own vocabulary. We consciously strive to have experiences related to the land so that we can convey information to our customers with words that carry genuine feeling."

They also take time to maximize the umami of the ingredients.

"The juicy rendering of the tomatoes, focused in the foreground, is impressive (Sample 8). After peeling and concentrating their flavor, they are made into tomato sauce. In photography terms, the bokeh effect further emphasizes the deliciousness of the tomatoes. The vividness of the color is also an essential element for conveying the deliciousness of the ingredients. The quality of this image, without any processing, is truly amazing."

The AI assistant function recognizes the subject and scene during shooting and adjusts the saturation. In the case of tomatoes, it is optimized as food photography. It recognizes 19 categories and further enhances smartphone usability through machine learning.

Dishes are carefully prepared, starting with the ingredients. Through the sample photos taken with the HUAWEI P20 Pro, we have glimpsed some of the commitments of Restaurant Hiramatsu Hiroo. And then, a dish filled with many emotions is created.

"It varies depending on the combination of ingredients, so I can't say for sure, but I don't cook from a purely design perspective. The important thing is that all ingredients harmonize within a single dish (Sample 9). If you can bring out the charm of each ingredient, I believe you can create a delicious-looking dish. This applies even to a simple grape dessert (Sample 10). Even with the same grapes, the combination creates a fresh taste."

French cuisine creates innovation upon tradition. Chef Hiramatsu also approaches new dishes based on the culinary methods that have been passed down through generations. By continuously practicing his commitments, he creates dishes that can only be experienced at Restaurant Hiramatsu Hiroo.

Photography may have a similar approach. While using photography as an expression, the subject is interpreted and captured through individual sensibility. With the HUAWEI P20 Pro, the AI assistant function handles fine adjustments, allowing for more instantaneous capture of what is felt. It cannot be definitively said that this is the best approach to taking a perfect photo. However, if the goal is "how to take a photo with high completion," it is undoubtedly superior to a camera in terms of accessibility for anyone.

Born August 25, 1981, in Hiroshima. After graduating at the top of his class from Tsuji Culinary Institute France, he trained at the three-Michelin-starred French restaurant "Les Prés d'Eugénie." Upon returning to Japan, he honed his skills at "Restaurant Hiramatsu Hiroo" before returning to France. After training at "Auberge de l'Ill" in Alsace and "Paul Bocuse" near Lyon, he was appointed sous-chef at "Restaurant Hiramatsu Paris." Since 2012, he has been showcasing his culinary expertise as the head chef of "Restaurant Hiramatsu Hiroo."
