A Dish Capturing the Essence of Tottori, Akita, and Nara
This menu, the second in the "Seasonal Menu Inspired by Road Trips Across Japan" collaboration between "INTERSECT BY LEXUS" and "SUGALABO," is now available.
Chef Suga, who served as the right-hand man to French culinary master Joël Robuchon and now leads the exclusive "SUGALABO" restaurant, reportedly travels across Japan almost every month to discover local artisans and their ingredients.
This aligns with Chef Suga's "ingredient discovery journeys" and Lexus's desire to encourage people to "travel across Japan by car and discover more of its charm." The result is a dish that encapsulates the essence of various regions each season.
Following the October 2016 launch, this second installment features three dishes. Chef Suga's creations include "Crab and Broccoli," a gratin generously using scarlet prawns from Tottori Prefecture, visited by the chef in November, and paired with "Kirakira Midori" Daisen broccoli; and "Kiritanpo Pot-au-feu," which elevates Akita Prefecture's specialty kiritanpo with rich Hinai Jidori chicken and foie gras meatballs, seasonal vegetables, and black truffle.
For dessert, the "Strawberry 'Kotoka' Vacherin" offers a refreshing balance of tartness and sweetness with a compote of organic strawberries 'Kotoka,' grown at Sakano Farm in Nara Prefecture, and rhubarb, served with homemade vanilla ice cream. These dishes, brimming with the charm of regions across Japan, are now complete.
"INTERSECT BY LEXUS TOKYO" signifies a "crossroads" where people, things, cars, and culture converge. This is a limited-time seasonal dish where Japan's exquisite seasonal ingredients meet Chef Suga's talent.
