Loin montagne - The popular "Fig & Cranberry." A mineral-rich bread packed with dried figs, cranberries, and walnuts. Free from eggs, milk, and butter. Ready around 9:00 AM. ¥780 for a whole loaf, ¥390 for half.
Loin montagne - "I want to bake bread that is safe, healthy, reassuring, and above all, delicious," says Chef Hiroshi Toyama.
Loin montagne - "Nothing Added" Shokupan, baked without eggs, dairy, butter, or other fats. Safe for those on calorie-restricted diets or with allergies. Its remarkable elasticity and appearance are indistinguishable from regular shokupan. Ready around 2:00 PM. ¥240 per loaf, ¥120 for half.
Loin montagne - "Forest Nuts" bread, made without eggs, milk, or butter. It features a dough of Hokkaido whole wheat flour, walnuts, rum-soaked currants, and Ehime Iyo mandarin peel, encasing baked macadamia nuts. Ready around 9:00 AM. ¥170 each.
Loin montagne - "Jewel-like Pan aux Fruits," baked with a generous amount of 10 kinds of dried fruits and nuts, including plums and apricots. Free from eggs, milk, and butter. Slice and enjoy with tea. Ready around 9:00 AM. ¥2000 for a whole loaf, ¥1000 for half, ¥250 per slice.
Loin montagne - "Shirakami Kodama Yeast," born from the World Natural Heritage site Shirakami-Sanchi in Akita Prefecture. Pictured is the fresh type, characterized by its strong fermentation power, delicate aroma, and natural sweetness. The shop sells the dry type of yeast.
Loin montagne - The shelves are lined with so many breads, it's hard to choose. Take your time reading the detailed descriptions.
Loin montagne - With 120-130 varieties of bread, six artisans work in seamless teamwork to bake them one after another.
Loin montagne - The selection is vast, including French breads like baguettes and German sourdoughs. Staff are happy to offer recommendations on how to best enjoy them.
Loin montagne - The sign was custom-ordered from a French tile maker. An amusing anecdote: it was ordered in "strong red" but turned out pink for some reason (laughs). The shop's name, "Loin Montagne," means "distant mountain" in French, an homage to Shirakami-Sanchi and derived from the chef's surname.
