Boulangerie Nicolas | "Rustic" made with high-hydration dough, shaped with minimal handling. Characterized by its chewy texture. Expected to be ready around noon. Large: ¥200, Small: ¥100.
Boulangerie Nicolas | "Bauernbrot," a hearty farmer's bread made with 60% rye and house-made sourdough. Expected to be ready around noon. Whole: ¥1200, Half: ¥600.
Boulangerie Nicolas | "Fromage," a French bread dough filled with three kinds of cheese (mozzarella, red cheddar, cream) and baked. Melted cheese spills out from the cuts when baked, creating a striking appearance. Expected to be ready around noon. ¥200 each.
Boulangerie Nicolas | While many items are on a daily special, the selection includes many unique, original creations not often found elsewhere. Deciding what to choose is part of the fun.
Boulangerie Nicolas | The understated display within the shop reflects the baker's love and care for his bread.
Boulangerie Nicolas | "Soda Bread," which Chef Sugiyama learned first when he entered the baking industry, has a crumbly texture like a pastry. The "Soda Bread" at the new Boulangerie Nicolas also features a lineup of original, distinctive varieties.
Boulangerie Nicolas | The lettering on the window and the illustrations on the clock built into the baking rack were both done by Chef Sugiyama. They serve as the warm and gentle trademark of Boulangerie Nicolas.
Boulangerie Nicolas | Chef Sugiyama, who admits with a slight sigh that he is working alone while his family remains in Ibaraki, is energetically expanding his activities, including writing a book, teaching at vocational schools, and leading various workshops.
Boulangerie Nicolas | From his large, soft hands, numerous bold yet delicate breads are created. His fluid, efficient movements are beautiful to watch.
Boulangerie Nicolas | A cozy shop nestled in a quiet residential neighborhood. Though the storefront is small, the workspace in the back is spacious. Look for the red awning.
