TOKYO PREMIUM BAKERIES | 10th Time: Showmaker Gallery

Schumacher | The "Partykranz," made with 30% rye and 70% domestic wheat, is a visually festive and delightful bread, topped with sunflower seeds, pumpkin seeds, white poppy seeds, rye groats, and black poppy seeds. Scheduled to be ready at 10:00 AM. ¥380 per loaf.
Schumacher | The "Pretzel," a familiar symbol for bakeries in Europe, is a traditional bread originating from southern Germany. Lightly salted, it pairs wonderfully with beer. Made with 100% domestic wheat. Scheduled to be ready at 10:30 AM. ¥200 per loaf.
Schumacher | "Roggenbrot" means rye bread in German. This is a traditional, intensely sour bread made with 100% rye. It's the most standard bread for Germans and pairs well with ham, cheese, and wine. Scheduled to be ready at 9:00 AM. ¥900 per loaf / ¥450 per half.
Schumacher | During our visit, a regular German customer and their child, who live nearby, came into the shop. Bread is a staple in the German diet. On this day, they bought a large quantity of bread for their son's lunchbox and for home.
Schumacher | Chef Nobutaka Shimizu, who is fluent in German. Many German customers visit weekly, indicating the trust he has earned from the local German community.
Schumacher | The "Sonnenblume," made with 100% rye. Its characteristic feature is the nutty aroma of sunflower seeds generously coating the bread, along with a pleasant sourness. It's rich in iron, calcium, and vitamins, believed to be beneficial for cold sensitivity and anti-aging. Scheduled to be ready at 9:00 AM. ¥1000 per loaf / ¥500 per half.
Schumacher | At Schumacher, they bake bread using a sourdough starter brought back from Germany, carefully nurturing it. German bread is highly nutritious and low in calories, making it a healthy food that one can enjoy daily without getting tired of it.
Schumacher | Chef Shimizu explains, "My approximately two years of bread training in Germany were invaluable. I bake the bread exactly as I learned there, without any modifications."
Schumacher | The shop displays photos of his mentor, Andreas Schumacher, and scenes from German bakeries. The original "Schumacher" in Germany is a reputable establishment with six locations.
Schumacher | This is the only shop in Japan permitted to operate under a "norenwake" (franchise) agreement from the popular German bakery "Schumacher." The green logo mark, identical to the main store's, serves as its distinctive sign.
