[Yamakikunizawa Hyakubashoten Selections: Ipponzuri Katsuobushi Honkarebushi + Grater Set]
Founded in 1947, Yamakikunizawa Hyakubashoten, located in Ibusuki City, Kagoshima Prefecture, adheres to traditional methods in its bonito flake production.
This product uses only bonito line-caught in the waters near the islands of Tanegashima and Yakushima. Through a process involving many hands and the power of nature,
it is slowly dried to concentrate its umami, resulting in the finest honkarebushi.
This time, it is paired with a bonito flake grater crafted using the woodworking techniques of Yamaya Manufacturing, a company known for its expertise in metalworking from Sanjo City, Niigata Prefecture, a region historically renowned for its metal crafts.

[Kinshichi Shoten Selections: Ipponzuri Katsuobushi Honkarebushi Katsuo Pack]
Founded in 1955, Kinshichi Shoten meticulously selects its bonito, paying attention to every detail of its form, to produce delicious bonito flakes. Only the elite flakes that survive this rigorous selection process are finished into honkarebushi.
Furthermore, during the mold-culturing process, they play classical music, including Mozart, to aid fermentation and aging – a unique method employed by Kinshichi Shoten. The honkarebushi, crafted through relentless dedication and innovative ingenuity, truly deserves the title of masterpiece.
